I suspect a combination of Cultivation and pickiness regarding which god he eats the flesh of contributes to the minimal nature of his transformation.
Actually the pink may have nothing to do with dietary oddities, unless we imagine that he’s also feeding it to his mount.
Considering that the mount has the same kind of eyes (slitted yellow, check last page) and toothless maw as the rider, that’s a distinct possibility.
